- 200g spaghetti
- 300g cherry tomatoes, halved
- 2 garlic cloves, thinly sliced
- 3 tbsp good olive oil
- A big handful of fresh basil
- Parmesan, salt and black pepper
Method
- Cook the spaghetti in well-salted boiling water until al dente.
- Warm the olive oil and garlic gently until fragrant, then add the tomatoes.
- Cook for 8–10 minutes until the tomatoes collapse into a glossy sauce.
- Toss in the pasta with a splash of cooking water, then the torn basil.
- Serve with Parmesan, black pepper and a final drizzle of olive oil.
Notes
Use the ripest tomatoes you can find. In winter, a tin of good cherry tomatoes works beautifully too.
