Ingredients

Tap an ingredient to tick it off.

  • 200g spaghetti
  • 300g cherry tomatoes, halved
  • 2 garlic cloves, thinly sliced
  • 3 tbsp good olive oil
  • A big handful of fresh basil
  • Parmesan, salt and black pepper

Method

  1. Cook the spaghetti in well-salted boiling water until al dente.
  2. Warm the olive oil and garlic gently until fragrant, then add the tomatoes.
  3. Cook for 8–10 minutes until the tomatoes collapse into a glossy sauce.
  4. Toss in the pasta with a splash of cooking water, then the torn basil.
  5. Serve with Parmesan, black pepper and a final drizzle of olive oil.

Notes

Use the ripest tomatoes you can find. In winter, a tin of good cherry tomatoes works beautifully too.
